Pan fired Sea Bream

2 LARGE OR 4 SMALL SEA - BREAM
1 LEMON
OLIVE OIL
Butter
SALT AND PEPPER

Fillet the fish and cut into small fillets, using tweezers ensure you remove all the bones!
Season the fish with peppr, add no salt at this stage.
Put 4 knobs of butter in a pan and a dash of olive oil,
Place fillets in pan skin down and cook for 2 minutes,
Turn over and cooker for a further minute.
Season with salt and put under a hot grill skin side up for another minute or until skin is crispy.
 
Server with mashed potatoe and garden peeas!
